Chicken Broccoli Bake

Chicken Broccoli Bake- Serves 4

2 chicken breasts cooked and chopped
1 can cream of broccoli soup
1/3 c milk
2 c broccoli cooked
1 c cheese
2 TBSP butter, melted
1 c bread crumbs

Cook the broccoli and the chicken.  Mix the broccoli soup and the milk together.  Mix the bread crumbs and butter together.  Add chicken to bottom of the 9in pan, add broccoli, and soup mixture.  Top with cheese, on top of the cheese put the bread crumbs.  Bake at 350 for 30min. or until cheese is melted.

*If you are going to freeze this recipe, put in freezer before topping with bread crumbs

Baked Pasta

Baked Pasta- Serves 6

1 Package noodles of your choice(I like spirals)
1 lb ground beef, browned
1 tsp each basil, oregano, onion powder, garlic powder
1 can spagetti sauce(I like garlic and onion)
1 c shred cheese
1 c veggies(if you wish)

Cook the noodles acoording to package directions.  Brown the ground beef in a skillet.  I always add garlic and onion because I love the extra flavor.  I also add when it is almost completely browned some basil and oregano.  In a 13x9 pan add the noodles, the mix in the ground beef and spagetti sauce.  Top with the cheese of your choice.  *If you are going to add veggies, I use green beans a lot, mix that in before you put the cheese on top.  Bake at 350 for 30-40 min.
*If you are going to freeze it do so before you bake it

Chicken Ritz Casserole

Chicken Ritz Casserole- Serves 6 (this recipe is courtesy of my wonderful family in Hawaii)

3 chicken breasts cooked and cut up
2 TBSP olive oil
2 tsp onion powder
2 tsp garlic powder
1 can cream of chicken soup
1 c sour cream
2 rolls of Ritz crackers
3 TBSP butter melted
2 TBSP poppy seed

Cook the chicken in a skillet with some oil (I like to use olive oil and then put a bit of onion powder and garlic on it).  Chop up the chicken into bite sized pieces.  Pour half the chicken in the bottom of a 13x9 pan.  Mix together the chicken soup and the sour cream.  Pour half over the chicken, top with the rest of the chicken, and then the last of the soup mixture.  Crush up the Ritz crackers and add to the butter and poppy seeds.  Top the chicken with the Ritz mixture. *If you are going to freeze it now it would be the time to put it in the freezer.  If you are ready to eat it now, put it in the oven at 350 for 45min.

Ham/Potato Bake

Ham Potato Bake- Serves 4 (or in my husbands case 1!)

2 c shred potatoes frozen
1 can cream chicken soup
1 c shred cheese
2 c broccoli
1 c chopped, cooked ham

Add the potatos to the bottom of the pan, stir in the cream of chicken soup and 1/2c of the shred cheese.  If using frozen broccoli cook, and then mix with the ham.  Add to the pan with potatos.  Stir together well.  Top with remaining cheese.  This fits in a 9in loaf pan. or 8x8 pan. Bake at 350 for 30min.

Veggie-Sausage Soup

Veggie-Sausage Soup-16 servings
2 med onions, chopped fine
1 green pepper and one red pepper, chopped
1 celery ribs, chopped
4 garlic cloves minced
1 TBSP olive oil
1 lb Smoked Kielbasa or Polish Sausage cut into 1/4 in pieces
2 med potatoes diced
1 can cream-style corn
1 can kernel corn
1 c mushroom sliced
1 can cream mushroom soup
1 can chicken broth
2 med carrots sliced
1 TBSP Worcestershire Sauce
1 TBSP Mustard
1 TBSP basil
1 TBSP parsley
2 c cheddar cheese
1 can evaporated milk

In a pan saute onions, peppers, celery in oil until tender.  Add garlic and cook for 1 min. longer
Transfer to slow cooker and add everything else but leave out the milk and cheese.  Cook 6-7 hrs on low until everything is tender.  Then add milk and cheese, stir well and cook for an additional 30 min. Until it is well blended.

This recipe is from my taste of home slow cooker book, and I have not yet tasted it but it got really good reviews and it smells amazing while cooking.  I cannot wait to try it!  So if you try it before I do, let me know how it tastes.

Pregnant!

So guess what we are pregnant again... I am 10.5 wks pregnant with a sweet little one!  I can't wait until it arrives, in April (most likely the first week since we are going to have another C-section).  We are so thrilled and so extremely blessed that it happened so quickly. We have always wanted a big family and we are on our way now!! We currently have an almost 8 mo old baby, so yes they are going to be close in age.  In my mind, that just means they will grow up knowing nothing different.  I know it will come will lost sleep and many challenges along the way.  But I couldn't be more excited!  Don't we always learn our most valuable lessons when we are stretched and tired, when we must rely fully on the Lord.  And trust me I know I am going to need him having a 14 mo old and a new baby running around at the same time.  I am so excited and count myself so blessed that God choose to give us two children so close to together, we couldn't have asked for anything better!  I will make sure to share our journey with you as I am sure it will be filled with lots of trials and joys as we try to learn how to balance everything in our lives.

Chili

Chili- This recipe I got from my wonderful friend, but I make the mild version do to my aversion to spicy food

2 can tom sauce(big can not sure on oz sorry)
1 can busch's chili beans(mild in my case)
1 packet mild chili seasoning (you can go hot if you like)
1 lbs ground beef
1 clove minced garlic

Brown the ground beef in a pan, add garlic when it is about half done. Once fully cooked add chili seasoning.
In a pan add tom sauce and beans together. Stir in the meat mixture. Cook on low for about 20min, until it is heated all the way through. 
As you might notice this does not have a lot of beans, no tom. chunks, and is more soup like.  It is still thick but not like the usual you can stand your spoon in your chili thick.  I don't like it that thick. I am quite picky when it comes to food and this was the perfect chili recipe for me.  I will never leave this recipe it is absolutely perfect!  You can add whatever to it if you like tomato chuncks just substitute one of the cans of sauce for diced tomatoes.

Serve, I then top with a small amt of sour cream, cheese, and some crackers.  Nothing beats this on a cold winter day.  If your from Kansas you also have to serve it with Cinnamon Rolls, which I still don't get but whatever floats your boat!

Baked Potato Soup

Baked Potato Soup- Makes 10 servings

2 onions chopped fine
2 cloves garlic, minced
3 TBSP butter
2 TBSP flour
2 c water, divided
4 c chicken broth
4 potatoes chopped small
1 large carrot grated
1.5 c mashed potato flakes (used butter ones added extra flavor)
.5 lb cooked and crumbled bacon
.5 tsp basil
.5 tsp thyme
2 c heavy whipping cream (you could use milk or half and half, it just won't be as creamy)
1 c shred cheese

Cook onions and butter together until tender, add garlic.  Stir in flour and then add 1 c water slowly.  Bring to a boil and cookd for 2 min longer until thick and bubbly. Should look like the picture below when it is done!
At the same time that is cooking I chop up my potatoes and grate my carrots!  I also start my bacon cooking so that everything is done at the same time, I don't like to sit around waiting on things!
Add all the ingred. to the slow cooker with the exception of the cream and cheese, set those aside for much later.  Stir everything together well.  Cover and cook on low for 6-8 hrs.  I found I needed to stir it a few times, because the potatoes like to stick to the bottom of the pan.  Once it is cooked all the way through (the potatoes should be soft), add the cream and cheese and stir well.  Let cook for a bit longer, just until the whole soup is settled (well the cream is warm and cheese melted)!
Pour yourself a bowl and Enjoy!
 
*This has been my husbands favorite soup so far, we didn't freeze but one bag because he wanted the rest in the fridge for him to eat for dinner for the next couple nights!

Broccoli Soup

Broccoli Soup- I think this makes like 4-6 servings
8 c frozen broccoli (cooked and drained, then stuck it in the blender because I don't like big chunks in my soup)
1 lg carrot grated
3 TBSP butter
2 cloves garlic minced
2 TBSP flour
32 oz heavy whipping cream (you can just use milk, but I like rich creamy soup)
2 c cheddar cheese
2 onions chopped (really fine)

Cook broccoli, drain and then chop up fine, if you don't like big chunks in your soup.  I also wanted to spread the flavor around.  In a seperate pan, melt butter.  Add Garlic, onion, and flour stir well, add cream(milk) quickly as you don't want the butter to brown.  Stir and cook until it starts to get thick and boil. Then cook for 2 min longer.  Turn off burner and add cheese, stir until cheese is fully melted. Stir everything together in a big pot and let simmer until it is heated all the way through (I believe it took like 15 min.) Then top with cheese when it's all done (did I mention I love cheese)!

Enjoy- The best broccoli soup I have ever had (better than Panera in my opinion)

Winter Soup

Winter Soup-Makes 14 servings
2 lbs ground beef
3 onions chopped
1 clove garlic, minced
3 cans beef broth(10.5oz ea)
1 can diced tom.
3 c water
1 c. diced carrots
1 c. diced celery
1 c green beans(I used frozen)
1 c. peeled and cubed potatoes
2 tsp parsley
2 tsp. basil
1/2 tsp thyme
(you can again add salt and pepper if you like, but I prefer not to)

Cook the beef and onions in a skillet until meat is brown and onions are soft.  Add garlic and cook for a bit longer like a min or two. Drain.  Add all ingred to slow cooker (5qt), stir in meat mixture.  Cook on high for 8hrs or until heated all the way through.
*Note: I also cooked this one on the stove since I was making several at a time for 3 hrs.  Once it was done, I transferred to freezer bags.  Label and date the bags so you always know which ones to use first! Also cool at room temp for a bit and then put in fridge, this will help it avoid freezer shock as it will still be hot and you don't want to add piping hot to a freezer!!
Yummy!

Beef Barley Soup

Beef Barley Soup- Makes 8 Servings (in our case 4meals)

1.5 lbs of beef stew meat
1 TBSP olive oil
1 can diced tom
1 chopped onion
1 c. diced celery
1/2 c. chopped green pepper
4 c beef broth
2 c water
1 c Spag. sauce
2/3 c barely
1 TBSP Parsley
1/5 tsp basil
(you can put salt and pepper in but I don't add salt to any of my food)

Brown meat in a skillet with olive oil. Drain. In a 5-qt slow cooker combine the rest of the ingred.  Stir in beef.  Cover and cook on low for 9-10 hrs or until meat is tender.
*Note: I made several soups at a time, so I just made this in a big pot on my stove and it took about 3 hrs with the burner set on 7.
I then separated it into Ziploc bags, labeled and dated them for future use, as I said I made several at a time so I could not obviously eat them all at once. Very excited to eat later though.  Comes out smelling a lot like stew but definitely a lot soupier(if that is a word, well it is now!)

Freezer Meals

So I have been going absolutely crazy with Freezer meals lately since we got our big deep freeze(it's 17.5 cu ft).  I am so excited about finally having one, that I can't wait to fill it.  I have been cooking different things a couple of days, but still have several days left of cooking.  I will be posting all my recipes on here so look for them, as they are all delicious. I must for worn though, I love good southern style cookin' so lots of cheese, garlic, and onion!!  I will probably post a bunch today and then hopefully be slowly adding more as I create some more in my wonderful kitchen.  I absolutely love to cook, but with an almost 8mo old baby, I never know how my morning is going to go.  I work in the evenings so our big meal of the day is at lunch and then we have a smaller meal for dinner. (which may be healthier not quite sure, but I know that is how all the old farmers used to eat, at least so I have been told by all my good friends at work)  I'm a bit slow with computer technology so I will figure out how to eventually link them all to one page so they are easier to find, but it may take me some time. Did I mention I am fairly busy at the moment???  I also watch two other little cuties two days a week, and go to a Bible study an hr away on Wed, so that take pretty much my whole day up.  Any way I will stop rambling and get some of these recipes posted for your convenience I hope you enjoy them as much as I do.

Swagbucks....Need I say more!  I have just figured this search engine out and let me tell you I wish I would have found it a long time ago.  You get rewards for searching for items.  You get rewards if you use coupons from the site, once you redeem them, but still who doesn't love some coupons that can do double duty.  So any way if you haven't checked out this site yet you need to! Busy

It has been a busy and exhausting week so far and it is only Tuesday.  Yesterday I had a ton of energy and was able to get some much needed errands done.  I then crashed hard for the afternoon though and spent it mainly doing nothing, which bugs me but I had absolutely no energy.

 Sunday was a great day, I got to spend it with my husband, and he let me take a nap and listened for the baby so I could get some much needed uninterupted sleep.  He also sanded a bit in our basement which is slowly coming along.  Then we went to youth group and had a great time. 

Today on the other hand has not been productive at all. The lil man was extremely needy this morning and wouldn't let me leave his sight (I was lucky to get to the bathroom without him screaming).  Don't know why just must be an off morning because he has always been such a wonderfully happy baby!  He woke up from his nap much better though and is now all kinds of happy and has let me get the dishes done and some light cleaning.  Now if only my energy level would reboot.  I am draging now and considering taking a nap with him as I can hardly keep my eyes open.  I will post more later, hopefully this weekend I will start posting my freezer meals as I have made quite a bit but just haven't uploaded the pictures to put on here yet.

Wonderful Day

So today was absolutely wonderful.  It only got up to 80, it has been over 100 for way to many days, and was definitely a welcomed event!  So the walk to church was wonderful as it was only like 70 this morning.  We also were able to have a fire outside!  One of my favorite things, I love out door fires and my wonderful mom bought us a fire pit for Christmas when we first moved into our house. So it was great to all be able to sit around the fire in the wonderful fall air. What a wonderful Sunday.  Oh and the little monkey also let us take a nice long nap this afternoon.  I'm telling you, it doesn't get much better than this!

Knit Elf Hat-Baby

I have a friend that loves photography and does an amazing job at it who wanted an elf hat for her newborn son, so she asked me if I could make one.  And I of course, said sure thing!  So here is the pattern that I used.

Note: This was a very quick knit because I was knitting 3 yarns together making it extra thick and fun.

3 balls of yarn(whatever suits you, we used the kind with the balls in it, so it woud have a fun texture)
size 10 needles(again this is big but it's because of how thick the yarn was going to be)

Note: I also always knit my baby hats on straight needls and sew up the side, it is easier for me then trying to do it on the round or double pointed.

Cast on 20 stitches (prob could have done 25)
Knit until hat is 4in in length
Knit 1, Knit 2tog, knit remaining stitches
Continue the decrease pattern until you have half your stitches left.
Knit 6 rows
Knit 1, Knit 2tog, knit remaning stiches
Continue decrease pattern until you have 5 stitches left
Knit until hat is a long as you want it
*I like my elf hat to come down past the base of the hat about 2 in
Cut yarn leave a long tail (don't cast off or remove stitches from needle yet)
Then out of the yarn cut a whole bunch of 18in pieces-I had a total of 15
I then threaded three pieces of yarn into each of the remaining stitches and made them fold in half(so the half way point was by the stitch-therefore making it 6 strands instead of 3
Next braid all the yarns together and tie at the end.  Leaving a nice full tail.
Note:I also added some more yarn pieces to the bottom just to give it some more fun frilly stuff.
This is one of my beautiful friends babies, with the hat on! Isn't it cute????
